I don't know about you, but I'm a total Nosey Nellie when it comes to what people are having for dinner. I am the person out at a restaurant that needs to know what everyone else is having before I can commit to choosing my own meal. I get serious food FOMO, and one of my favorite things is checking out recipes and meal plans on Instagram and Pinterest. I can't be alone! If you are in need of some meal ideas, keep reading!
Each week, I will be sharing what our family is eating - in case you might need some ideas or inspiration. If I make any tweaks to the meal for the boys, I will include that too! I will always link the recipe or share the details if it is something I make on my own. Generally, I only plan four meals a week and then we eat leftovers, go out to eat, or grab take out - so you will only find four meal ideas here each week. Disclaimer: This is what works for our family. We are allll about balance. You may eat more veggies or less, more meat or less, and you may notice that sometimes we have something a little more indulgent. Your meals may look different, and that is both normal and okay!
Meal One: Turkey Flautas
Have you ever had a "flauta"? I hadn't, until I received them as a recipe in my Every Plate box. Since then, they have been a staple in our house and I've created my own versions of that original recipe. They are like easy enchiladas, and I am always in the mood for easy!
Ingredients:
-1 pound ground turkey
-1 packet taco seasoning (we love the Siete brand seasoning)
-shredded cheese
-6 tortillas
Steps:
-Preheat over to 400.
1. Brown ground turkey and separate as you are cooking.
2. Add taco seasoning according to package directions.
3. Spray tortilla on both sides with olive oil.
4. Lay the tortilla flat and spoon on some turkey filling. Sprinkle with cheese.
5. Roll up the tortilla and lay on a cookie sheet.
6. Continue until all 6 tortillas have been rolled.
7. Place in the oven for 10 minutes.
8. Check the flautas and if not browned, put on broil for a couple of minutes, while watching very carefully.
9. Serve with sour cream, crema, or guacamole if you wish.
I love this with a salad on the side!
Meal Two: Gyros
This is another recipe featuring yet another Trader Joe's item - their precooked Gyro meat! It makes for such a delicious, quick, and easy meal. The marinated veggies is what makes this meal, so don't skip that step!
Ingredients:
-1 package of precooked Gyro Slices from Trader Joe's
-1 cucumber, peeled and chopped
-2 plum tomatoes, scooped out and chopped
-1/2 red onion, thinly sliced
-chopped butter lettuce
-Mini Naan bread (we love Aldi's!)
-Tzatziki (we also love Aldi's!)
-Feta Cheese
-Greek dressing of your choice
Steps:
1. Place chopped cucumbers, tomatoes, and red onion in a bowl.
2. Top with 2 tablespoons of Greek dressing and mix. Let the veggies sit for at least 15 minutes before serving.
3. Place Gyro Strips into a hot pan, cook until crispy. Meanwhile, toast Naan.
4. Top toasted Naan with some chopped lettuce and a good amount of the cucumber mixture. Layer Gyro Strips on top.
5. Sprinkle feta cheese all over. Drizzle with tzatziki and add additional Greek dressing to taste.
Just two meals to share this week, as life is busy at the moment and we won't be eating at home much. Hopefully next week is less chaotic!
