Greek Couscous Bowls

Easy, Quick, and Delicious!

This meal is such an easy one and it is so delicious! Ready in less than 30 minutes, start to finish, colorful, and filling. Also a great prep ahead lunch! 

Ingredients:

-1 cup dry pearl couscous cooked according to package

-4 links spinach/feta chicken sausage (we get ours at Aldi and it is so delicious!) sauteed 

-1 cucumber, chopped

-1 pint cherry tomatoes, halved

-1/2 red onion, slices thin 

-1/2 can black olives, sliced 

-Greek dressing of your choice (I use Christie's)

-feta cheese 

-tzatziki 

-sauteed spinach (optional)

Steps:

1. Divide couscous, chicken sausage, and veggies across four plates.  

2. Top with feta, tzatziki, and Greek dressing. 

3. Mix together and enjoy!
